Welcome to the forum firebird76:halloha:
Well you can deal with nostlgia in two ways:
1. hire a cleric and order him to adopt the population, but this requires many books.
2. Guarante a long period of peace without any war. The population will be happy and the nostalgy slowly decreases.
As you see the first one is the better solution if you like conquering, therefore make sure that you build churches, libraries and where possible even an university to increase your book income.
As what Kuno said can take some time, you should also build inns and any other happiness increasing buildings in the meantime as well.
Also, remove the tax collector building - this is a +5% happiness bonus immediately.
or just make your warriors good :)
In your situation I would conquer what I need, until I'm satisfied with my empire I will make peace and improve foreign relations. Meanwhile I would build inns, hostels and any building to increase happiness while also improving my cities. I would have lots of money since I would have lots of land, so I would either use the money to hire a cleric and then use books, or I could do the military strategy, just crush all rebels in sight and slowly nostalgia would decrease.

Another question of nostalgia.
Some of my provences aren't converted to my nationality (I haven't adopted the population yet). However, some of my captured territories have been converted.
My question is, how do I know if a territory has been adopted or not without sending a cleric there only to find out it had already been converted and then having to wait for my cleric to return? Is there somewhere I can look to know for sure?

In the rebellion risk for every province - if there is nostalgia in the province, then it hasn't been adopted. As for the religion, the easiest way to check it is in the respective religious view in the political map.
To expand a bit on Traveller's rebellion risk, to tell if there is nostalgia while looking at the rebellion risk, you need to click on Wars in the list of items used to calculate the risk. Once clicking on Wars, you will see a nostalgia listing(if there is any nostalgia). When you are not at war, nostalgia will slowly go away without having to adopt the province.
You can also check the religion of your newly acquired province by clicking on the city and just to the left of the city information box(right beside the 6 slots for troops stationed in the city), there is a symbol showing the religion of that province.

Thank you, Dobber. That is the information I was looking for. All the little hidden menus in this game are starting to freak me out:silly:
Another good advice, when I asked "how do you win this game?" Someone pointed out that if you put the pointer over the portrait of voting individual, you get a breakdown of why they voted that way or didn't vote.
