Realm`s religion

Can someone please tell me how can i change the religion of a Realm in a specific period?!For example Thrace in high should be Orthodox rather than catholic,Solun and Hellas also becouse no one speaks of any conversion after the fall of Constantinopol,the latins just occupied the land and split the spoils.

i did unpacked them and i did find here :maps/europe/map/realms religion but then?!

change orthodox to catholic or vice versa, as you wish :)
but i think it has to be in scenario file, not in map file...
