I just need some tips on how to best take out the pumping stations and the defenses surrounding them.

The defenses are really not all that difficult, but it would be easier to tell you how to take them out if we knew which Clan you are using.

The trick is to keep them from being taken back while you are taking out others!

I'm using the Norsemen, just because they're my favourite tribe.

I tried a strategy of sticking ballista towers by the first pump, and nothing has retaken it yet. I think one of them got taken back, but I can't find it.

Well incorporate some log cannons in your attack force to take out the towers and bring down the gates quickly. Once you take out 3 of the pumping stations the clock stops. Also the more of their bases you take out the less you have to worry about a pumping station being lost. But also on the same token, once you have disabled all 5 you don't have to worry about losing them anymore!
