How do I speed up the game?

It's in regular mode (snail) and how do i go to cheetah to speed things up?

"Cheetah speed" would be Shift + F8. Other speeds intermediate are F6 & F7 (without the "shift"). To go back to "snail speed" use F5.

I think in some events, like pirate attacks, the speed automatically goes back to F5 to give you time to react.
