Personally, I like the Wartburg in Eisenach, East Germany.
It is an impressive stronghold and, besides that, a famous historical site...the place, where Luther translated the bible, just to name one.
Other beautiful German castles are (imho):
Marksburg, Cochem, Eltz, Stahleck, Schloss Hohenzollern and Stolzenfels.
In Great Britain, I like Caernarvon, Conwy, Edinburgh and Stirling most.

Hey guys I was lucky enough to travel to the UK last Xmas and travel the country side (Wales) checking out castles.
From the castle I've seen or walked around my favourite would have to be Harlech Castle- Unbelievable Views of the country and Ocean and still a well structured Castle with a stack load of history - great castle you can walk around and explore.
Second best would be Conway then Caernarfon.
One day I would like to explore Castle in other countrys "France, Ireland-Germany or anywhere where there are great Castles.

My favourite castle? Hrmmmm..maybe Krak Des Chevaliers in Syria. It is an incredible place. :)
